Roast Chicken:

I buy what's called "fat chicken" from the supermarket. It's already cleaned inside,so it's faster to cook. You might want to marinade the chicken overnight for better flavour.but you can do it over 3 hours before preparing the dish. And feel free to adapt this recipe to your own taste.

Ingredients:
1 "fat" chicken
2 tbsps sweet blabk soya sauce (kicap manis)
1 tbsp dried rosemary herb
1 tbsp dried thyme herb
1 tbsp sesame oil
Pinch of salt and pepper

Stuffing:
2 whole sticks cinnamon (kayu manis)
2 whole bubls garlic
2 whole spring onions
2 whole coriander leaves

Steps:
1. Heat the oven between medium to high heat.
2. Wash chicken well under cold running water.Cut off excess fat.Run water right through the chicken so it's clean for stuffing later.
3. Rub chicken with salt and pepper all over - including the inside.
4. Pour 2 tbsps of sweet thick soya sauce over the chicken.Rub it over the skin to cover the chicken. This will give the chicken a rich colour.
5. Sprinkle 1 tbsp of dried rosemary and thyme all over the chicken, feel free to use more,if you like the taste.
6. Smash garlic whole (use the side of a Chinese cleaver).Stuff into chicken (do not peel garlic).
7. Wash spring onions and coriander.Cut off roots.Stuff into chicken.
8. Stuff cinnamon sticks into chicken.Secure the stuffing by piercing a toothpick through the chicken skin.
9. apaour sesame oil over the chicken.Pour corn oil into pan,so chicken will not stick to the bottom of the pan.
10. Put chicken on the middle rack of the oven for 45 minutes.Chicken is ready when it is crispy on the outside.
